Egg Bites for the Unhoused (or anyone)

What you are going to need to make each dozen -

  • 2 silicon muffin molds

  • 2 turkey pans (9”X13”)

  • One rugged blender or food processor

  • 2/3 pound of ground sweet italian sausage

  • 8 jumbo eggs

  • 8 Oz Monterey Jack Cheese

  • 8 Oz. Swiss Cheese

  • 8 Oz. Whole Milk Cottage Cheese

  • 1-1/2 Tbsp Minced or Ground Garlic

  • 1-1/2 Tbsp Ground Black Pepper

  • 1 Tsp Sodium Citrate (this is a special salt (not harmful) that breaks the bonds of the cheese to create a smooth texture).

  • Cooking oil spray

  • Parchment paper

  • A piece of tin foil that exceeds the size of the entire six unit mold

  • A butter knife

Instructions

  1. Fill the turkey pans with 2 “ water, place the pans on the top rack of the oven, turn the oven on to 350F and let the oven pre-heat for ½ hour (the water needs to come up to temperature to provide moisture in the oven.

  2. Crumble and thoroughly cook the sausage – set aside to cool.

  3. Cut up the Monterey Jack and the Swiss cheese to approximately 1 inch squares (alternatively you can shred the cheese if you have a KitchenAid or equivalent).

  4. Add the ingredients to the blender (food processor). 8 eggs first, citrate, garlic, pepper, Monterey Jack, Swiss and Cottage cheeses.

  5. Blend until smooth (approximately 1 minute at medium speed)

  6. Generously spray the silicon muffin molds with cooking spray.

  7. Add a few clumps of sausage (up to about 1/5 of the volume of each mold

  8. Carefully pour the blended liquid into each mold so that it reaches approximately 2/3 of the volume of the mold (do not worry about exceeding this as these do not rise). By filling to about 2/3, you should have enough liquid for 12 molds. Any leftover, simply add it to the molds.

  9. Place in the 350F steamy oven for 30 minutes.

  10. Pull from the oven to cool for 7 minutes.

  11. Run the butter knife around the edge, being careful to not cut into the egg bite. This is to free the egg bite from the edge so that when you remove it, the entire bite comes free.

  12. Flip the entire mold onto the tin foil and tap the bottoms

  13. lift away the mold to enjoy your finished egg bite

  14. When putting into a storage container, make sure to place parchment paper on the bottom and between layers if stacked.

  15. When re-heating in a microwave, allow four minutes on high for every 9 bites.
